Fig Cookies - Low Carb

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter
  • 1 Egg Beaten
  • 2 cups Bob’s Red Mill whole grain low carb
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 cup figs chopped
  • 1/2 cup walnuts chopped

Instructions

  1. Preheat oven to 350 degrees
  2. Cream butter and sugar
  3. Add the beaten egg
  4. Mix well
  5. Sift together dry ingredients
  6. Fold dry ingredients into sugar, butter, egg mixture
  7. Fold in figs
  8. Fold in walnuts
  9. Drop by spoonfuls and flatten onto greased baking sheet
  10. Bake 15 to 20 minutes
  11. Let cool
