Fig Cookies - Low Carb
Ingredients
- 1 cup brown sugar
- 1/2 cup butter
- 1 Egg Beaten
- 2 cups Bob’s Red Mill whole grain low carb
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1 cup figs chopped
- 1/2 cup walnuts chopped
Instructions
- Preheat oven to 350 degrees
- Cream butter and sugar
- Add the beaten egg
- Mix well
- Sift together dry ingredients
- Fold dry ingredients into sugar, butter, egg mixture
- Fold in figs
- Fold in walnuts
- Drop by spoonfuls and flatten onto greased baking sheet
- Bake 15 to 20 minutes
- Let cool
