Low Carb Coleslaw Salad

Ingredients

  • 3 Cups Shredded coleslaw Pre-bagged from store is just fine
  • 1 Whole Granny smith apple Cored and diced
  • 1/4 Cup Pecans Halves or Pieces
  • 3 tablespoons Mayo
  • 3 tablespoons Cream Could use milk…but it will raise the carb count
  • 1 tablespoon Vinegar
  • 1 tablespoon Sweetener This may vary depending on what brand you use
  • 1/2 tablespoon Black pepper
  • 1/2 tablespoon Celery seed
  • 1/4 tablespoon Sea salt

Instructions

  1. Coleslaw Base
  2. 1) In large bowl (room for stirring), combine pre-shredded coleslaw, pecans, and diced apple.
  3. Coleslaw Dressing
  4. 1)In a bowl, combine mayo, cream, vinegar, sweetener, celery seed, and salt and pepper.
  5. Whisk together till blended.
  6. 2) Taste it! If it’s too tart, add sugar. If it’s too sweet, add vinegar…
  7. 3) Pour dressing over the coleslaw base and mix well till everything is coated.
  8. Let stand for 10-15 minutes to allow flavors to mellow, and coleslaw to soften slightly.
