Low Carb Coleslaw Salad
Ingredients
- 3 Cups Shredded coleslaw Pre-bagged from store is just fine
- 1 Whole Granny smith apple Cored and diced
- 1/4 Cup Pecans Halves or Pieces
- 3 tablespoons Mayo
- 3 tablespoons Cream Could use milk…but it will raise the carb count
- 1 tablespoon Vinegar
- 1 tablespoon Sweetener This may vary depending on what brand you use
- 1/2 tablespoon Black pepper
- 1/2 tablespoon Celery seed
- 1/4 tablespoon Sea salt
Instructions
- Coleslaw Base
- 1) In large bowl (room for stirring), combine pre-shredded coleslaw, pecans, and diced apple.
- Coleslaw Dressing
- 1)In a bowl, combine mayo, cream, vinegar, sweetener, celery seed, and salt and pepper.
- Whisk together till blended.
- 2) Taste it! If it’s too tart, add sugar. If it’s too sweet, add vinegar…
- 3) Pour dressing over the coleslaw base and mix well till everything is coated.
- Let stand for 10-15 minutes to allow flavors to mellow, and coleslaw to soften slightly.
