Low-carb Sausage, Egg and Cheese Casserole

Ingredients

  • 12 Eggs
  • 1 pound Breakfast Sausage
  • 2 ounces Feta cheese Cubed or crumbled
  • 1/2 cup shredded cheese
  • 1/4 White Onion Diced
  • 1/2 Green pepper Diced

Instructions

  1. Preheat oven to 350(F) degrees. Start browning the sausage in a frying pan, and when it’s about halfway done, add the onions and peppers. While that is cooking, beat the eggs with salt and pepper to taste. Once the sausage is fully cooked, spread it in the bottom of a 9x13 inch casserole pan. Sprinkle the feta cheese on top of the sausage and then pour the eggs on top. Top with the shredded cheese. Bake covered for one hour.
