Baked oat and seed breakfast cookie
Ingredients
- 2 cups oats
- 1 teaspoon baking soda
- 2 scoops vanilla protein powder
- pinch sea salt
- 1/4 teaspoon cinnamon
- 1/2 cup applesauce
- 1 egg
- 1/2 teaspoon vanilla
- 1 pack stevia
- 1/2 cup nut butter
- 1/2 cup chocolate chips
- chia seeds
- flaxseed
- pumpkin seeds
- sunflower seeds
Instructions
- 1. Preheat oven to 350ºF and spray large cookie sheet with coconut oil.
- 2. Mix all dry ingredients in large bowl. Add egg, applesauce, and stevia.
- 3. Using hands, shape dough into 8 large cookies and place on baking sheet.
- 4. Bake 10-12 minutes. Let cook on baking sheet. Good in fridge for 3 days or freeze.
