Baked oat and seed breakfast cookie

Ingredients

  • 2 cups oats
  • 1 teaspoon baking soda
  • 2 scoops vanilla protein powder
  • pinch sea salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup applesauce
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 pack stevia
  • 1/2 cup nut butter
  • 1/2 cup chocolate chips
  • chia seeds
  • flaxseed
  • pumpkin seeds
  • sunflower seeds

Instructions

  1. 1. Preheat oven to 350ºF and spray large cookie sheet with coconut oil.
  2. 2. Mix all dry ingredients in large bowl. Add egg, applesauce, and stevia.
  3. 3. Using hands, shape dough into 8 large cookies and place on baking sheet.
  4. 4. Bake 10-12 minutes. Let cook on baking sheet. Good in fridge for 3 days or freeze.
