Low carb Ham and cheese crustless quiched

Ingredients

  • 8 oz shredded sharp cheddar cheese
  • 6 large eggs
  • 1 cup Heavy cream
  • 8 oz ham cubed
  • 1/2 cup yellow onion diced
  • 2 cups Broccoli Florets
  • 1 tablespoon butter

Instructions

  1. 1. Preheat oven to 375
  2. 2 In a skillet over medium high heat melt 1 T of butter and add onions and ham. Saute for 5-7 minutes until pnions are translucent
  3. 3 Place broccoli florets in a micorowave safe bowl and add 2 T of water. Microwave for 2 minutes until broccoli is lightly steamed and tender.
  4. 4 In a bowl add eggs and 1 cup of heavy cream. Whisk together.
  5. 5 Place ham, onions, broccoli and 6 oz of cheese in a greased 9 in pie plate or quiche pan
  6. 6 Pour the egg mixture over the meat and veggies.
  7. 7 Sprinkle the remaining 2 oz of chese over the mixture
  8. 8 Place in the oven and bake for 35-40 minutes or until you can jiggle the pan and the quiche doesn’t shake in the center. Remove and let cool for about 5 minutes before cutting and serving.
