Monster Breakfast Bars

Ingredients

  • 1/2 cup butter melted
  • 2 cups creamy peanut butter
  • 4 Eggs
  • 13/4 cups brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 11/2 teaspoons ground cinnamon
  • 31/2 cups old-fashioned rolled oats
  • 1 cup dried apricots snipped
  • 1 cup dried cherries
  • 1 cup cinnamon chips
  • 1 cup flaked coconut
  • 1 cup dried cranberries
  • 1 cup golden raisins

Instructions

  1. - Preheat oven to 350 degrees. Spray a 13x9 inch baking pan with cooking spray, set aside.
  2. - Place all Topping ingredients (melted butter through vanilla extract) into the Vitamix container in the order listed and secure lid.
  3. - Selct Variable 1.
  4. - Swich machine to sTart and slowly increase speed to Variable 5.
  5. - Blend for 20 seconds or until smooth, using tamper if necessary.
  6. - Meanwhile, in large-sized mixing bowl stir together Oat Mixture ingredients (baking soda through rolled oats). Pour Topping mIxture over Oat Mixture; mix well with a sturdy wooden spoon. Mixture is very thick.
  7. - Stir in Fruits; mix well. Pour into prepared pan. Spread to even out top.
  8. - Bake for 20 to 22 minutes or until bars are lightly brown at edges. Pan will be heavy.
  9. - Coole completely; cut into desired bar size.
  10. - Store covered at room temperature.
