Sweet Pineapple Stir Fry (low carb)
Ingredients
- 2 tablespoons Vegetable oil divided
- 4 8 oz. New York steaks
- 3 cloves garlic finely chopped
- 1 tablespoon Ginger roots finely chopped
- 1/2 cup Chopped Fresh Pineapple
- 1 cup Broccoli chopped
- 1 cup soybean sprouts
- 2 packets Stevia
- 1/2 teaspoon Red pepper flakes
- 1/4 cup low sodium soy sauce
- 1 tablespoon Balsamic Vinegar
- 2 teaspoons Sesame Oil
- 2 cups Uncle Ben’s long grain & wild rice cooked
Instructions
- Slice the steak into thin slices. Heat a large skillet on medium-high heat; add 1 Tbsp. of the vegetable oil. When the oil is shimmering, add the steak. Stir-fry for 2 minutes, then remove with a slotted spoon and set aside. Add the remaining 1 Tbsp. of oil, along with the garlic, ginger, pineapple, and broccoli. Stir-fry for 3-5 minutes and ad the remaining ingredients; cook until the broccoli reaches desired doneness. Add the steak back in the pan and toss through. Serve the stir-fry immediately over rice.
