Low Carb Broccoli Cheese Soup
Ingredients
- 1 tbsp Butter
- 1/2 cup Onion, diced
- 4 Garlic cloves, sliced
- 4 cups Broccoli Florets, fresh or frozen
- 4 cups Chicken broth I use 6 cups
- 1 tsp Black pepper
- 2 oz Cream cheese, diced
- 1/2 cup Heavy whipping cream
- 2 cups Cheddar cheese, shredded
Instructions
- 1. Heat a large saucepan over medium heat, add the butter. Add the onion and garlic. Cook and stir for 30 sec.
- 2. Add the broccoli, broth, and pepper. Bring to a simmer and cook until the broccoli is tender, 8-10 min.
- 3. Turn the heat to LOW. Use an immersion blender to puree the soup, leaving some florets whole.
- 4. Turn the heat to Medium, add the cream cheese and stir to melt. Bring the mixture to a boil.
- 5. Turn the heat to LOW and in a slow, steady stream, add the cream.
- 6. Add the cheddar cheese, one handful at a time, and stir until each handful is melted.
