Low Carb Broccoli Cheese Soup

Ingredients

  • 1 tbsp Butter
  • 1/2 cup Onion, diced
  • 4 Garlic cloves, sliced
  • 4 cups Broccoli Florets, fresh or frozen
  • 4 cups Chicken broth I use 6 cups
  • 1 tsp Black pepper
  • 2 oz Cream cheese, diced
  • 1/2 cup Heavy whipping cream
  • 2 cups Cheddar cheese, shredded

Instructions

  1. 1. Heat a large saucepan over medium heat, add the butter. Add the onion and garlic. Cook and stir for 30 sec.
  2. 2. Add the broccoli, broth, and pepper. Bring to a simmer and cook until the broccoli is tender, 8-10 min.
  3. 3. Turn the heat to LOW. Use an immersion blender to puree the soup, leaving some florets whole.
  4. 4. Turn the heat to Medium, add the cream cheese and stir to melt. Bring the mixture to a boil.
  5. 5. Turn the heat to LOW and in a slow, steady stream, add the cream.
  6. 6. Add the cheddar cheese, one handful at a time, and stir until each handful is melted.
