Banana coconut bread (Paleo) optional, with fruit

Ingredients

  • 3 whole Bananas
  • 3 whole Egg whites make the yolks poached, good for snacks
  • 5 1/2 tablespoons Coconut shredded
  • 1 tablespoon Oil
  • 139 grams Cottage cheese
  • 1 teaspoon Vanilla extract
  • 1/3 teaspoon Ginger ground
  • 140 grams Strawberries chopped

Instructions

  1. Mix dry ingredients, beat whites, mix with oil and vanilla, mix together, add strawberries
  2. Bake a THIN layer, otherwise it will take forever (1h)
