Banana Breakfast Sandwiches

Ingredients

  • 2 bananas, halved crosswise and then halved lengthwise
  • 4 slices whole wheat bread (or multigrain bread)
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • salt, pinch
  • 1 tablespoon unsalted butter
  • 2 tablespoons honey
  • 1 teaspoon confectioners’ sugar

Instructions

  1. Arrange banana slices in single layer on two slices of bread; top with remaining bread.
  2. In bowl, combine eggs, milk, vanilla, cinnamon and salt; whisk to blend.
  3. Soak each sandwich in egg mixture for a minute or two or until bread is saturated.
  4. Melt butter in skillet over medium heat.
  5. Place sandwiches in skillet; cook until bottoms are golden, 2-3 minutes.
  6. Flip sandwiches.
  7. Place pan on sandwiches to press; cook until crisp and golden, 2-3 minutes.
  8. Cut sandwiches into quarters.
  9. Serve warm with drizzle of honey and sprinkling of confectioners’ sugar.
