Cheesy Bacon Ranch Casserole (Low Carb)

Ingredients

  • 1 whole Deboned Rotisserie Chicken Can Substitute 2-4 chicken breasts
  • 1/2 pack Thick Cut Bacon 5-6 slices of thick cut bacon, diced thick
  • 1 bunch Broccoli Cut into small florets. Can substitute 12oz bag fresh or frozen.
  • 1 cup Ranch Seasoning
  • 1 cup Ranch Dressing
  • 8 ounce Cream Cheese
  • 4 cups Shredded Cheese
  • 1 cup Chicken Broth
  • 1/4 cup Seasoning Salt

Instructions

  1. 1. If not already completed, debone your Rotisserie Chicken into small bite size pieces.
  2. 2. In a large mixing bowl, mix together the chicken, ranch seasoning and the seasoning salt until coated.
  3. 3. Dice your bacon and cook in non-stick pan. Then add to mixing bowl.
  4. 4. Cut your broccoli into small florets and either steam or boil until cooked; approximately 5-9 minutes. Add to mixing bowl when complete.
  5. 4. Soften cream cheese in microwave.
  6. 5. Add cream cheese, ranch dressing, and chicken broth to mixing bowl and carefully mix all ingredients.
  7. 6. Add two cups of shredded cheese to mixture, setting aside the other two cups.
  8. 7. Mix until satisfied and then transfer ingredients to a large casserole dish.
  9. 8. Top casserole with remaining 2 cups of cheese.
  10. 9. Bake at 350 for 20 minutes.
