Cheesy Bacon Ranch Casserole (Low Carb)
Ingredients
- 1 whole Deboned Rotisserie Chicken Can Substitute 2-4 chicken breasts
- 1/2 pack Thick Cut Bacon 5-6 slices of thick cut bacon, diced thick
- 1 bunch Broccoli Cut into small florets. Can substitute 12oz bag fresh or frozen.
- 1 cup Ranch Seasoning
- 1 cup Ranch Dressing
- 8 ounce Cream Cheese
- 4 cups Shredded Cheese
- 1 cup Chicken Broth
- 1/4 cup Seasoning Salt
Instructions
- 1. If not already completed, debone your Rotisserie Chicken into small bite size pieces.
- 2. In a large mixing bowl, mix together the chicken, ranch seasoning and the seasoning salt until coated.
- 3. Dice your bacon and cook in non-stick pan. Then add to mixing bowl.
- 4. Cut your broccoli into small florets and either steam or boil until cooked; approximately 5-9 minutes. Add to mixing bowl when complete.
- 4. Soften cream cheese in microwave.
- 5. Add cream cheese, ranch dressing, and chicken broth to mixing bowl and carefully mix all ingredients.
- 6. Add two cups of shredded cheese to mixture, setting aside the other two cups.
- 7. Mix until satisfied and then transfer ingredients to a large casserole dish.
- 8. Top casserole with remaining 2 cups of cheese.
- 9. Bake at 350 for 20 minutes.
