Egg Roll in a Bowl [LOW CARB]

Ingredients

  • 1/2 Onion Chopped
  • 2 Cloves Garlic Minced
  • 1 Pound Lean Ground Turkey
  • 1 Red Bell Pepper Chopped
  • 1 Cup Mushrooms Sliced
  • 1 Bag Coleslaw Mix
  • 2 Green Onions Sliced Thin
  • 1 Tablespoon Sesame Seeds Lightly toasted
  • 1 Tablespoon Sesame Oil
  • 2 Tablespoons Braggs Liquid Aminos
  • 1 Tablespoon Rice Vinegar

Instructions

  1. Heat a large pan over medium heat with a little bit of olive oil.
  2. Add the onion and cook until almost tender, add garlic and cook for a minute more.
  3. Add turkey and cook until meat is done - then take contents of pan and dump it into a colander in the sink.
  4. Let it sit there and return pan to stove.
  5. Add red pepper and mushrooms and sauté until almost tender, then dump in bag of coleslaw.
  6. Add in sesame oil, aminos and vinegar to taste.
  7. Cook until cabbage is tender and then add the turkey mixture back in.
  8. Top with sesame seeds and green onions.
  9. Optional Add-ins:
  10. Brown rice
  11. Scrambled eggs
  12. sriracha
