Fat Free Oatmeal Pancakes

Ingredients

  • 3/4 cup oatmeal
  • 1 3/4 cups fat-free buttermilk
  • 4 tablespoons egg substitute
  • 1 cup whole wheat flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder

Instructions

  1. Combine oats and buttermilk. Set aside.
  2. Place egg substitute in a separate bowl and beat until stiff peaks form.
  3. Combine dry ingredients in a large bowl. Add oatmeal mixture and mix well. Gently fold in egg substitute.
  4. Coat a griddle with nonstick cooking spray (make sure to coat well or the pancakes will stick) and heat to 300°F.
  5. Pour 1/4 cup of batter on griddle and cook until tops are bubbly, turn and cook for 1 more minute.
