Famous Breakfast Cookies

Ingredients

  • 2 c. Butter- room temp
  • 2 c. Dark brn sugar
  • 4 eggs
  • 1 Tablespoon vanilla
  • 3 c. Flour
  • 1 Tablespoon baking soda
  • 2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon clove
  • 4 c. Rolled oats
  • 2 c. Shredded Coconut (opt.)
  • 2 c. Raisins
  • 2 c. Mix of dried cranberries ~~amp cherries
  • 1 c. Pumpkin seeds
  • 1/3 c. Flax seeds
  • 1/3 c. Sesame seeds (all seeds toasted)

Instructions

  1. Preheat oven to 350*
  2. Cream sugar and butter until fluffy (about 10 minutes)
  3. Beat in eggs one at a time, then vanilla
  4. Mix dry ingredients together
  5. Slowly add dry to creamed mix by hand
  6. Mix in oats, coconut, seeds and fruit
  7. Place on parchment paper in even 1/4c. scoops, mounded
  8. Bake for 7 minutes, turn and put on bottom rack for 7 minutes
  9. Cool on wire rack right away
