Donut Balls - Healthy, Yes Healthy (Low Carb)
Ingredients
- 1 cup Carbquik baking mix
- 2 tablespoons Carbquik baking mix
- 1/4 cup Splenda granular (sugar substitute)
- 1/2 teaspoon Ground cinnamon
- 1 egg (or equivalent in egg substitute)
- 2/3 cup Skim milk (Hood - Calorie Countdown)
- 1 teaspoon Vanilla extract
- COATING:
- 2 tablespoons Splenda granular (sugar substitute)
- 1/2 teaspoon Ground cinnamon
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Spray a 12 hole mini muffin pan with butter flavored cooking spray.
- 3. In a medium bowl, combine baking mix, 1/4 cup Splenda and 1/2 teaspoon cinnamon.
- 4. Add egg, skim milk and vanilla extract.
- 5. Mix well to combine.
- 6. Drop by spoonfulls into prepared muffin pan. Fill about half full. Fill each empty hole about half full of water.
- 7. Bake for 14 to 16 minutes.
- 8. Place muffin pan on a wire rack and cool for 10 minutes.
- 9. Carefully empty water and remove balls from pan.
- 10. In a ziplock plastic bag, combine sugar and cinnamon coating. Place warm balls in 2 or 3 at a time and shake to coat.
