Country-Style Breakfast Casserole
Ingredients
- Cooking spray
- 8 ounces low-fat smoked link sausage
- 2 Tbsp. maple syrup
- 2 pounds frozen country-style hash brown potatoes
- 2 cups fat-free milk
- 1 1/2 cups egg substitute
- 2 slices low-fat American cheese diced
- 1 /4 cup shredded Parmesan cheese or grated
- 1/2 tsp. dry mustard
- 1 /4 tsp. pepper
- 2 Tbsp. green onions green part, finely snipped, optional
Instructions
- Preheat the oven to 350 degrees F. Lightly spray a 13 x 9 x z-lncn baking pan with cooking spray.
- In a medium skillet, cook the sausage over medium high heat for 3 to 4 minutes, or until browned, turning occasionally. Remove from the skillet and cut into bite size pieces. Wipe the skillet with paper towels; Return the
- sausage to the skillet.
- Pour in the maple syrup. Cook for 1 minute, stirring to coat.
- Place the sausage in a single layer in the baking pan.
- Top with the potatoes.
- In a medium bowl, whisk together the remaining ingredients except the green onions. Pour over potatoes.
- Bake for 1 hour,or until the center is set (doesn’t jiggle when the pan is gently shaken).
- Sprinkle with the green onions. Let cool for at least 10 minutes before cutting.
