Country-Style Breakfast Casserole

Ingredients

  • Cooking spray
  • 8 ounces low-fat smoked link sausage
  • 2 Tbsp. maple syrup
  • 2 pounds frozen country-style hash brown potatoes
  • 2 cups fat-free milk
  • 1 1/2 cups egg substitute
  • 2 slices low-fat American cheese diced
  • 1 /4 cup shredded Parmesan cheese or grated
  • 1/2 tsp. dry mustard
  • 1 /4 tsp. pepper
  • 2 Tbsp. green onions green part, finely snipped, optional

Instructions

  1. Preheat the oven to 350 degrees F. Lightly spray a 13 x 9 x z-lncn baking pan with cooking spray.
  2. In a medium skillet, cook the sausage over medium­ high heat for 3 to 4 minutes, or until browned, turning occasionally. Remove from the skillet and cut into bite­ size pieces. Wipe the skillet with paper towels; Return the

  4. Pour in the maple syrup. Cook for 1 minute, stirring to coat.
  5. Place the sausage in a single layer in the baking pan.
  6. Top with the potatoes.
  7. In a medium bowl, whisk together the remaining ingredients except the green onions. Pour over potatoes.
  8. Bake for 1 hour,or until the center is set (doesn’t jig­gle when the pan is gently shaken).
  9. Sprinkle with the green onions. Let cool for at least 10 minutes before cutting.
